home improvements

We have lived in our home for 3 years now, and have taken the approach to sloooooooowly furnish and decorate it a little at a time.  We have been so excited to be able to add a few improvements this year, and I really feel like our house is becoming a home!  It's just so exciting!

Boxes galore, ready to be put together!
Furniture assembled.
And final product with rug included.
We need some artwork on the walls now, but all in time.

Surround sound installation - speakers going in at the front of the room.

And some more in the back of the room, where we need it most.

TV mount going up.

And mounted!
On another note: Jackson needs himself a bullet!

If anyone is looking to get work done as far as wall-mounting a TV, surround sound, media room installations, etc....I HIGHLY recommend using The Plasma Guy.  Edwin, a guy Scott and I went to high school with, is extremely professional, super easy to work with, and does a phenomenal job!

Scott and his dad are designing and building a media cabinet to go under the TV, which I am so excited about.  Scott found a nice modern/straight lined piece of furniture in a magazine that he is using to base his design on, and I think it is going to look so great in this space.  Can't wait to see the final product!

Perot Museum

This past weekend was TI weekend at the Perot Museum, so I was able to get up to 8 tickets for free.  I immediately sent an email over to Jacqueline to see if her sweet family wanted to join us, as we'd been talking about going to the museum for awhile.  We made the plans, and the day arrived.  I can't believe I didn't snap a single picture of The Tapellas, but I promise they were there!  Saturday + Spring Break + TI weekend at the museum + a 4 year old with a short attention span = an interesting & crowded museum experience.  I definitely want to go back sometime & take my time to see it all.  Such a neat place!

There is this awesome simulation where you can race against athletes or animals.
Jackson chose the cheetah.

Run boys, run!
Notice the cheetah is not even in the picture anymore.  :)
Those suckers are fast!

Menu for the week

Seriously, one of the highlights of my week is planning my meals out for the next week.  I LOVE doing this.  I LOVE grocery shopping, I LOVE cooking, and I LOVE planning.  Praise God for this, because if I didn't...things would be even more interesting trying to work full-time, keep a house running, spend time with my family, and cook/grocery shop if I didn't enjoy it.  But alas, I LOVE it.  :)

Scott and I are trying to eat healthier and get in shape, so I've been cooking a ton of recipes from one of my favorite food bloggers over at Skinnytaste.com.  I seriously have yet to cook one of her recipes that wasn't awesome.  Last week, I made her Skinny Chicken Enchiladas, which were every bit as good as, if not better than, any Mexican restaurant's.  Do yourself a favor and try them out...incredible!  You will not be disappointed!

This week's menu is shaping up to be another yummy one!  All of the online recipes are linked if any of them interest you.  Deeelicious!

Sunday - Buffalo Chicken Lettuce Wraps
Monday - Chicken & Rice Dish, from Taste of Home Comfort Food Diet Cookbook
Tuesday - Baked Beef Ziti
Wednesday - Chicken Pot Pie Soup
Thursday - Quick Skillet Steak w/ Mushrooms & Onions
Friday - Double Date to Pappadeaux w/ my sister & brother-in-law

Another tool I use to help with menu planning for the week is Pinterest, of course.  I have a board called Healthy Eating, which I look at every week when planning my meals.  I also pin to this board whenever I run across a yummy looking recipe that I want to try out.  Once I've tried a recipe, I'll go back to my board and make comments to be sure I know whether I want to cook it again, or whether it wasn't the best.  If you're on Pinterest, you can find my Healthy Eating board here.
